Sunday Funday this week was spent with the Dad’s in my life.
I wanted to celebrate all fathers closest to me and I knew just how to appreciate them. All of my guys are Meat & Potatoes Men, so I opted for a menu where the meat was the star and fired up the grill.
Can you think of a meat that is more of a main character than a Tomahawk steak?

While the Tomahawks started as the obvious front runners, the winner was the Crab and Spinach Dip. It was such an underdog that I really didn’t even take pictures of it. But this dip was gone first and had everyone asking me to make it for the next event.
I served it in a cast iron dish and we used olive oil drizzled crostini for dipping. – I have seen these sold in stores already sliced in bags or you can get a French baguette and slice it yourself. I toasted the slices to add a little texture.

The dads said that the steak was the second best thing they ate BUT that the hasselback potatoes were the most impressive thing they ate, so they should take second place.
I washed, sliced and salted the outside of russet potatoes. In addition to cutting slits, I cut the potatoes in half to accommodate for the size they’d be after stuffing.
Since I made these potatoes on the grill I used thick cuts of bacon and cheese to withstand longer periods of heat. I let these smoke right over the Tomahawks and they tasted amazing.
Steak Details
I made a butter for the steak on the grill as well.
I kept it simple to let the smoke hold its own flavor and threw salted butter, rosemary, and garlic in a cast iron for basting.
I like my steaks Medium-Rare. You don’t have to enjoy yours as pink as me , but if you enjoy them at anything a little past medium… that’s interesting 🙂
-If I made this again I would make thicker slices for my vegetables. To get a good grill line such a soft fleshy vegetable should have been sliced thicker than what I had.
-I will absolutely be making this crab spinach dip again. I’ll be sure to post the recipe when I do.
-This gave me the idea to stuff a sweet potato with slices of brisket and a melty white cheese, topped off with bbq drizzle and cilantro?? Yes please.
