If you are looking for an easy pie recipe that can be adapted and turned into any flavor you want, this is it.

This recipe requires no baking and minimal prep time. If you plan to build on this recipe and add flavors I have a few notes that may help you get from the base recipe to your desired pie.

I love to serve this filling in a mini pie crust because it allows more variations but if you are only wanting to make one flavor, it could just as easily be put into one 9 inch pie crust. I left details for each mini pie I made at the very bottom.

Easy Ice Box Pie

This recipe makes enough to filling for a single 9 inch pie or about 15 mini pies.

Ingredients

  • 1 9 inch pre-made pie crust or 2-3 packs of mini pie crusts

  • 1 package (8 oz) cream cheese, softened

  • 1 can (14 oz) sweetened condensed milk

  • *Desired flavorings and mix ins

Directions

  • Prepare the filling
    -In a large bowl, beat together cream cheese and condensed milk.
  • Decide what flavor pie(s) you will be making
    -At this point if you are making one pie, begin to flavor the entire bowl of filling.
    -If you are making multiple pies, split your filling into smaller bowls so that you can flavor each one individually.
  • Flavor and decorate the pie(s)
    -Notes/measurements for some suggested flavorings are below.
  • Chill in freezer
    -Place pie(s) in the freezer for at least 2 hours or until firm.

  • Try using a chocolate pie crust instead of graham cracker if your pie has chocolate flavors.

Here is a breakdown of what extras I added to get my final pies, and a few bonus flavors.

The measurements below are not exact in some instances, but don’t stress. Anything past this point won’t make or break your pie, the base is already made. 🙂

-LEMON-
* For one pie- mix in 1/4 cup of FRESH lemon juice. Add up to 1/3 cup if you want the lemon flavor to be bold.
** For mini pies-
mix in lemon juice to taste, this will depend on how much filling you are working with.
*** Decorate the top with-
cool whip, lemons and lemon zest. I added yellow food coloring to my filling to make it more vibrant.
-LIME-
* For one pie- mix in 1/4 cup of FRESH key lime juice. Add up to 1/3 cup if you want the lime flavor to be bold.
** For mini pies-
mix in lime juice to taste, this will depend on how much filling you are working with.
*** Decorate the top with-
cool whip, limes and lime zest.
-PEANUT BUTTER-
* For one pie- mix in 1/2 cup of peanut butter and 1 cup of cool whip.
** For mini pies-
mix in 3-5 tablespoons of peanut butter and 1/4 cup cool whip.
*** Decorate the top with-
chopped peanut butter cups, cool whip, or chocolate drizzle.
CHOCOLATE
* For one pie- Prepare an instant chocolate pudding according to the box. Add 1-1.5 cups of pudding to the cream cheese mixture and 1 cup cool whip if desired.
** For mini pies-
Add prepared instant chocolate pudding by the tablespoon to desired richness. You can also add whipped cream for a lighter filling.
*** Decorate the top with-
cool whip, or chocolate shavings.
-STRAWBERRIES & CREAM-
* For one pie- Add in 1 cup diced strawberries, 1 tsp of vanilla and 1-1.5 cups of cool whip.
** For mini pies-
Add in diced strawberries and cool whip depending on the amount of filling you are working with. Omit the vanilla if you are working with a small batch.
*** Decorate the top with-
cool whip, or strawberries.
-COOKIES & CREAM-
* For one pie- Add 1 tsp vanilla, 1 cup crushed oreo cookies and 1-1.5 cups of cool whip.
** For mini pies-
Add in crushed oreos and cool whip depending on the amount of filling you are working with. Omit the vanilla if you are working with a small batch.
*** Decorate the top with-
cool whip, or crushed cookie pieces.
*CREAMSICLE*
* For one pie- mix in 1.5 cups of cool whip and 1/4 cup of orange juice concentrate. Add up to 1/3 cup if you want the orange flavor to be more bold.
** For mini pies-
mix in orange juice concentrate and cool whip by the tablespoon to taste , this will depend on how much filling you are working with.
*** Decorate the top with-
cool whip or orange slices.
*BANANA CREAM*
* For one pie- Prepare an instant banana cream pudding according to the box. Add 1-1.5 cups of pudding to the cream cheese mixture and 1 tub of thawed cool whip.
** For mini pies-
Add prepared instant banana pudding by the tablespoon to desired richness. Add whipped cream for a lighter filling.
*** Decorate the top with-
cool whip, or chocolate shavings.
*PINK LEMONADE*
* For one pie- mix in 1 tub of cool whip and 1 thawed frozen pink lemonade concentrate (6 oz) .
** For mini pies-
mix in pink lemonade concentrate and cool whip by the tablespoon to taste , this will depend on how much filling you are working with.
*** Decorate the top with-
cool whip, lemons or lemon zest. Adding a few drops of red food coloring will make the filling pink.
