You know when those last few bananas from the bunch are just sitting on your counter, getting spottier by the hour, and you don’t know what to do with them?

Cut them up and use them as the center for these peanut butter banana cups!

It’s as simple as melting some chocolate, dropping a slice of banana, adding peanut butter, and letting it all set up in convenient little cups. If you’re looking for a quick snack or dessert with only three ingredients (and zero baking), this recipe should have you covered.

I love how easy these are to tweak too. If you aren’t a peanut butter fan you can swap in almond, or your favorite nut butter, use dark or milk chocolate, or even add a sprinkle of sea salt like I did on a few.

So I’ll be honest.
There are no measurements for this recipe. I used the bottom of a bag of chocolate chips I had on hand and 1 ramekin sized scoop of peanut butter. It’s so simple though, I promise you can’t go wrong with eyeballing this one.

Chocolate, peanut butter, and banana team up for the perfect treat. These bite sized cups are a no bake, 3 ingredient win. Super easy to make and they can be done in so many different ways!

Ingredients

  • 1 – 2 Ripe Bananas, sliced

  • Chocolate, melted

  • Peanut Butter

Directions

  • Layer the chocolate base
    – Line a mini muffin pan with mini cupcake liners.
These are the perfect size to hold a banana slice. If you do not have a mini muffin pan the mini liners will sit in a regular size one.
    – Add melted chocolate into the bottom of each liner, making sure to coat the bottom evenly. (A piping bag or plastic bag with the tip cut off gives you more control here.)
  • Add the banana
    – Place one banana slice on top of the chocolate in each cup. Try to center it so the final layers stack evenly.
  • Melt the peanut butter
    – Warm the peanut butter just enough so it’s thin and loose. This helps it spread evenly and gives the tops a smoother finish. Spoon or pipe a layer of peanut butter over each banana slice.
  • Top it off and chill
    – Add more melted chocolate on top to cover the peanut butter completely. Tap or drop the tray gently a few times to smooth out the tops. Let them set in the fridge overnight to firm or pop them in the freezer for a faster finish.

Notes

  • Why Ripe Bananas? – The riper the banana, the sweeter and softer your bite will be. The soft center against the chocolate shell is a great combo.
  • Layering Tip – If you want to use less chocolate pour a thin layer first, then freeze, then add the peanut butter and banana before topping with more chocolate. This will keep the banana from sinking to the bottom of the thinner layer.
  • Add Crunch – Toss in a few chopped nuts for texture.
