Next time you need an easy weeknight dinner give these chicken parmesan meatballs a try. They are a quick fix and are a hit with kids and adults! These can be served with pasta, veggies, by themselves, tucked in a sub sandwich, or with a salad – basically, they’re as versatile as they are delicious.
Did I mention you can make these in one pan? In about half an hour?

minutesThese Chicken Parmesan Meatballs are a quick one pan recipe that’s perfect for busy weeknights. Full of flavor and cheese! These are sure to be a hit with kids and adults. Simple ingredients and minimal prep may make this one of your families favorites too.
Ingredients
1lb Ground Chicken
1/3 cup Panko Breadcrumbs
1/4 cup Grated Parmesan Cheese
2 Tbs Yellow Onion, Grated
1 Tbs Fresh Parsley, Chopped
1 Egg
1 tsp Italian Seasoning
1/2 tsp Dried Oregano
1/4 tsp Garlic Powder
1/4 tsp Red Pepper Flakes
Salt & Pepper to taste
1 Jar of Marinara Sauce
Fresh Basil, Chopped
Directions
- Preheat the oven to 350° F
-Plan to use a cast iron or oven safe pan for this dish. - Make the meatballs
-Combine all ingredients except the jar of sauce and basil.
-Shape meatballs into 1 inch balls, For the best cook do not exceed 2 inch meatballs.
(If you plan to stuff these with cheese now is the time) - Brown the meatballs
-Oil the pan and brown the meatballs on one side for 4-5 minutes before flipping and browning the other side for an additional 2-3 minutes. - Add marina sauce and cheese
-Pour a jar of marinara sauce in the pan with the meatballs.
-Top with AT LEAST 1 cup of mozzarella cheese, but feel free to use more! - Bake the meatballs
-Place the pan in your preheated oven and bake for 15-20 minutes. - Top with basil
-Add fresh basil to the meatballs and serve

Notes
- For more of a traditional crunchy chicken parmesan exterior you could roll your meatballs in panko breadcrumbs before you brown them.
- Try stuffing the meatballs with cheese! You can use mozzarella pearls or chunks and form your meatball around them for a cheesy center.
