This is an easy, super quick side dish that gets roasted in the oven and comes out crispy and delicious in under half an hour. Great for gatherings, holidays, or an easy weeknight dinner side dish.

Prosciutto wrapped asparagus is an easy way to take your asparagus to the next level. This is a super easy, super quick side dish that gets roasted in the oven and comes out crispy and delicious in under half an hour.

Ingredients

  • 1lb Fresh Asparagus – thick spears, if possible

  • 4-6 ounces prosciutto

  • 1-2 tablespoons olive oil

  • Ground Black Pepper

Directions

  • Preheat the oven to 400° F
    -Line a sheet pan in foil or parchment paper for easy clean up and set aside.
  • Prepare the asparagus
    -Wash and pat dry the asparagus spears. Trim the tough ends of the asparagus.
  • Wrap the asparagus in the prosciutto
    -I chose to cut my prosciutto slices in half length wise. This will allow more asparagus to show. If you want your bundles to be completely covered in prosciutto skip halving your slices.
    -Each bundle should use about 3-4 spears of asparagus. Make sure to pull the prosciutto with tension as you spiral around each bundle. This will ensure the bundles are tightly wrapped. Lay the wrapped bundles on your sheet pan.
  • Drizzle the asparagus with olive oil-
    -Finish by topping with ground pepper. The prosciutto will provide the salt needed.
  • Bake for 8-10 minutes
    -When the bundles are done the prosciutto should be crispy at the edges and the asparagus should be bright green and still slightly firm.

  • Try topping these bundles with lemon zest or shaved parmesan cheese.
  • If only thin asparagus is available, Double or triple the amount used in your bundles.
