Generally, I’m not a breakfast person. That’s because I would never find the time for it before rushing out the door to work.
But, when I first started working from home I realized I had the time to actually eat something .
Staying true to my “not really a breakfast person” roots, I didn’t want anything that required too much effort or made a whole meal. So I ended up making a simple avocado toast but it gave me the idea that I could put whatever I wanted on a piece of toast and enjoy it that way.
No real recipes for this one, but plenty of ideas.

Peanut Butter, Banana and Berries Toast

Toasted sourdough slice, topped with a spread of honey peanut butter then chopped bananas, fresh blueberries, quartered strawberries and honey almond granola.
Bacon, Egg and Avocado Toast

Toasted multigrain slice topped with a smashed avocado, fluffy scrambled eggs, crispy thick cut bacon, and a sprinkle of everything bagel seasoning.
Breakfast Filled Toast

Toasted slice of whole wheat . Then cut out the middle and poured in an egg and shredded cheese. Topped with bacon crumbles, cherry tomatoes halves and chives.
Berries and Cream Toast

Toasted sourdough slice topped with a spread of strawberry cream cheese, sliced strawberries, halved, raspberries and blueberries, fresh thyme, and a drizzle of honey.
Spicy Avocado and Egg Toast

Toasted multigrain slice, topped with an over medium egg, avocado slices, red pepper flakes, and an olive oil drizzle.
