Honestly, I made this for a brunch gathering and ended up having to remake the pitcher because a noticeable amount was gone before brunch had even started. The super sweet ice wine pairs really well with the tart raspberries and the tangy nectarines. The hardest part of this will be waiting for it to chill in the fridge. I would recommend at least an hour to give the fruit a chance to soak, but if you can make this the evening before I would let it sit in the fridge overnight.
Ice Wine is often used as a dessert wine because of its known sweetness. This sweetness comes from a few factors but the biggest reason is the way the grapes are harvested.
They are left on the vine late into the winter months allowing them to naturally freeze on the vine. This allows the grape to slightly dehydrate and that causes the sugars to concentrate. They are then harvested and pressed while still frozen to retain the sweetness.
Hence the name Ice Wine 😉

This cocktail combines a sweet ice wine with tangy nectarines and tart raspberries. Float that with Grand Marnier or the orange liqueur of your choice and add a sparkling water for some fizz. Super easy and quick!
Ingredients
375mL Ice Wine (1 bottle)
12 oz sparkling peach water* (1 can)
Grand Marnier
1 nectarine, sliced
1/2-3/4 cup raspberries
1/2-3/4 cup strawberries, halved
3/4 cup pineapple juice
1 lemon , juiced
ice
Directions
- Prepare the fruit
– Add the nectarine slices,raspberries,and strawberries to the pitcher. - Add the fruit juices
-In the same pitcher, add the lemon and pineapple juices - Add the alcohol
-Pour in the bottle of wine and the Grand Marnier - Finish it off
-Top the pitcher off with the can of sparkling soda and another splash of Grand Marnier. Complete by filling with ice, giving it a stir, and allowing some time to chill in the fridge.
