If you need something light but full of flavor and filling, give this Caprese Pasta Salad a try.

It has bow tie noodles that are coated in Parmesan and garlic then tossed with fresh basil, cheesy mozzarella and pops of bright cherry tomatoes, all finished with a balsamic glaze.  

It’s simple enough to serve as a side but satisfying enough to stand on its own! It won’t require much effort either. This recipe comes together very quickly and could even be made in advance. It has the perfect burst of vibrant fresh flavors that work well alongside any Italian dish ( like the Chicken Parmesan Pizza we had ) or as a star on its own. I’ve got a tip at the bottom for how to take this to the next level and make it a meal.

The measurements on this recipe are not as important as the concept. If you love tomatoes – add more! If basil isn’t your thing – leave it out! Point is, this is a very flexible recipe. Don’t get caught up on the fact this one is a little vague,  just measure with your eyes for what looks yummy to you!

Your new favorite twist on a Caprese Salad. Bow tie noodles get coated in Parmesan and garlic then tossed with fresh basil, cheesy mozzarella and pops of bright cherry tomatoes, all finished with a balsamic glaze.  

Ingredients

  • 4 oz Bowtie Pasta (about half a box)

  • 1/4  – 1/3 cup Reserved Pasta Water

  • 2 Tbs Olive Oil

  • 2-3 Garlic Cloves, sliced

  • 1/4 cup Parmesan Cheese

  • Salt and Pepper, to taste

  • 1 cup Cherry Tomatoes, halved

  • 1/4  cup Fresh Basil, chopped

  • 6-8 ounces Fresh Mozzarella Balls

  • Balsamic Glaze, for drizzling

Directions

  • Prepare Noodles
    -Salt your water and cook your pasta according to package directions. Once cooked, reserve 1/3 -1/4 cup pasta water before draining.
  • Make the Sauce
    -In a large pan, heat olive oil over medium heat. Add the sliced garlic and cook until fragrant and lightly browned. (about 1-2 minutes).
    -To the same pan ,add 1/4 cup of the reserved pasta water and the Parmesan cheese.
    Stir until cheese is melted.
    -Add the remaining pasta water if needed and season to taste with salt and pepper.
  • Coat the Pasta
    -Add the drained noodles to the pan and toss until even coated in the sauce.
  • Fold in Tomatoes, Basil and Mozzarella
    -Once the pasta has cooled slightly add in the chopped basil, halved tomatoes and mozzarella balls and fold or toss gently to combine.
  • -Drizzle with balsamic glaze to finish

Notes

  • Try adding in grilled chicken to take this from a side dish to  a meal.
  • Use the mozzarella balls that are marinated in herbs and oil for extra flavor.
  • If making in advance, wait until just before serving to add the balsamic glaze.
