This is an easy no-bake recipe for a hot Summer day. These s’mores can be made in advance and stored in the freezer for quick grabs. Scroll down to the notes for info on the best way to store your extras and a helpful tip before you serve them .

Ingredients

  • 2.5 cups Cold Milk

  • 2 cups and 1/2 cup Cool Whip , divided and thawed

  • 7 oz Marshmallow Fluff (1 jar)

  • 5 oz Cream Cheese, room temperature

  • 1 box (5.9 oz) Instant Chocolate Pudding Mix

  • 12 graham cracker, broken in halves

Directions

  • Prepare a 9×13 baking dish
    -Line a baking dish with parchment paper for easy clean up. Use a sheet larger than your base so the parchment paper hangs over the edge. This will create a handle for easy removal after freezing.
    – Place half of the graham crackers face down in this dish spaced slightly apart. This will make cutting easier when completely frozen.
  • Make the chocolate layer
    -In a medium bowl, mix together the pudding mix, milk, and 1/2 cup Cool Whip until combined and smooth. Pour and spread this mixture on top of the graham crackers in the prepared 9×13 dish and place in the freezer.
  • Make the marshmallow layer
    -In a medium bowl, beat together the cream cheese, and marshmallow cream until creamy. Then fold in the remaining 2 cups of Cool Whip until smooth. Spread this mixture directly on top of the chocolate layer.
  • Add the graham cracker tops
    -Top your frozen s’mores with the remaining graham crackers and cover the 9×13 dish with foil for the rest of the freezer time. This should take about 6 hours, or until everything is firm enough to cut through.
  • Trim the sandwiches
    -Once completely frozen, use a long blade to cut and separate the s’mores. Trim any excess filling for more uniform squares.

Notes

  • If you are needing to store extras these can be kept in the freezer. I recommend wrapping each sandwich in saran wrap and storing them in a freezer safe zip lock bag.
  • When layering your s’mores try to align the tops and bottoms as close to parallel as you can. This will make cutting through them much easier after they are frozen.
  • Try making these with chocolate graham crackers for a different version of a summer classic.
  • Allow these frozen s’mores to come to room temperature for 10-15 minutes prior to eating them. This allows the chocolate layer to soften up. Expect things to get MESSY as they thaw. The marshmallow layer is much softer.
