I like to make a variety of yogurt barks and keep them in my freezer for a healthier, easy answer to sweet tooth cravings.
When I was trying to decide which recipe I would share I couldn’t make up my mind.
There are so many possible combinations I figured the best thing to do would be to share a generic base formula for yogurt bark and a few ideas for toppings and mix-ins to make your own!
Yogurt Bark Base
The base is very simple. I use Greek yogurt for an easy extra boost of protein. The formula to follow is:
Yogurt + Sweetener + Mix-ins = Bark
The yogurt can be plain, vanilla, strawberry, lemon, etc. because whatever flavor you use as your base is fine- they all freeze the same.
The sweetener I use is typically honey. Agave can also be used, or stevia if you are looking to cut some of the sugar. You could also choose to leave this out completely and just do yogurt and mix-ins.
Mix-ins and toppings are going to be fruits, nuts, granola, chocolate, seeds, etc.
Once you have selected your combination what you’re going to do is lay wax paper on a baking sheet. In a bowl, combine the yogurt and sweetener and pour this mixture onto the lined baking sheet. When you have the yogurt evenly spread on the sheet all you do is add your toppings and freeze!
This usually takes about 3 hours, but I like to wait as long as I can so the bark is firm when I break it up. The bark can be broken apart or cut into uniform squares and will store in an airtight container in the freezer for about a month before ice crystals begin to form.
