Ingredients
Loaf of Bread – I recommend using a loaf that you have to slice yourself so you can get the slices thick enough to hold the custard. Standard pre-sliced loafs will be too thin.
1 egg
1/2 cup of Greek yogurt
Vanilla extract to taste
Fresh fruit of your choice for topping- I used raspberries, strawberries and blueberries
Directions
- Preheat the oven to 400° F
- Prepare the bread
-Slice your loaf of bread into 3/4 inch slices (you’ll want at least 1/2 inch) and use the back of a spoon to push down the bread and create a well for the custard. Be sure not to make your well to close to the edge or the custard will spill out. - Make the custard
-Combine the egg, yogurt and vanilla until smooth and spoon into the well that was just created. - Top with fruit
-Add your fruit right on top of the custard. You may want to cut larger fruits into thin or bite size pieces. - Bake for 10-12 minutes
-When the toast is done you can add a drizzle of honey or a dusting of powdered sugar if you’d like.
